Chive and Mint Pesto


We have several herbs growing in our window by our kitchen sink, two of which are chives and mint. They seem to sit there looking pretty for the most part so I decided to make a pesto with them to use on chicken. 



Ingredients:

1 1/2 cups chives, chopped
1 1/2 cups mint leaves, chopped
1/4 tbsp garlic salt
1/4 tbsp ginger
3/4 cup parmesan cheese
1/3 cup chopped pecans
1/3-2/3 cup olive oil, first cold pressed

Directions:

Combine the mint and chives. Add garlic salt, ginger, parmesan cheese and pecans. Once blended into herbs, drizzle olive oil over pesto. Use the amount of olive oil to your liking. 

I placed a spoonful of the pesto underneath the cooked chicken on its plate and spread more pesto over the chicken prior to serving. It was delicious and savory!
